Marinated Shrimp with Champagne Beurre Blanc





Sauce
2 cups Champagne or other dry sparkling wine
1/3 cup finely chopped shallots
2 tablespoons Champagne vinegar or other white wine vinegar
1/4 teaspoon whole black peppercorns
Shrimp
1 cup Champagne or other dry sparkling wine
1/4 cup extra-virgin olive oil
3 tablespoons minced shallots
1/2 teaspoon freshly ground black pepper
24 extra-large uncooked shrimp (about 2 pounds), peeled with tail left intact, deveined
1 tablespoon minced fresh chives
1 tablespoon minced fresh tarragon
1 tablespoon minced fresh parsley
Nonstick vegetable oil spray
1 cup (2 sticks) chilled unsalted butter, cut into 16 pieces
Combine Champagne, shallots, vinegar, and peppercorns in heavy medium saucepan. Boil until reduced to 1/4 cup liquid, about 20 minutes.
For shrimp:
Combine Champagne, olive oil, shallots, and ground pepper in resealable plastic bag. Add shrimp to bag and seal; shake bag to coat shrimp evenly. Marinate shrimp at room temperature at least 30 minutes and up to 1 hour, turning bag occasionally. Mix chives, tarragon, and parsley in small bowl.
Preheat broiler. Spray broiler pan with nonstick vegetable oil spray. Drain shrimp; discard plastic bag with marinade. Arrange shrimp on prepared pan in single layer. Broil shrimp until just opaque in center, about 2 minutes per side. Stand 3 shrimp, tails upright, in center of each plate.
Rewarm sauce base over medium-low heat. Whisk in butter 1 piece at a time, just allowing each to melt before adding next (do not boil or sauce will separate). Season beurre blanc to taste with salt and pepper. Spoon warm sauce around shrimp. Sprinkle with fresh herbs and serve

Macadamia Nut Bars

Macadamia Nut Bars
#1 butter
#1 brown sugar
12 oz honey
4 oz sugar
#2 chopped nuts,any kind
4 oz cream
1 -1/2 sheet pan baked pie dough shell
Bake pie shell make sure that the dough goes up the sides so the batter doesn't leak underneath.
Place all ingredients except cream and nuts unto a heavy bottom sauce pan. Bring to a full boil stir for 3 minutes. Turn off stove whisk in cream and stir in nuts. Pour unto pie shell. Bake in oven at 375 until it bubbles, Let cool completely. You can cut them in different shapes. Also you can bake this recipe as a pie or baby tarts instead of in a sheet. We like using Macadamia nuts but any nuts will be yummy.

Cake Contessa's Caramel Apples


6 Large or 12 small apples

2 cups heavy cream

2 cups sugar

1/4 cup unsalted butter

1/2 cup corn syrup (clear one)

Sticks


Wash apples

take out stems and place sticks.

place cream,butter,sugar, and corn syrup in a heavy bottom saucepan. Bring to a boil use a larger pot rather than a smaller one on medium heat boil until candy thermometer reaches 245 10-12 minutes. Shock in ice water and dip apples. When your dipping the apples if the caramel is still to hot it will not coat properly. Enjoy your apples. Great from Halloween to Thanksgiving!

Fondant Cabbage Roses


This cake is a dark chocolate cake,with strawberries and real whip cream, vanilla frosting, covered with dark chocolate rolled fondant. The flowers are also made of fondant. I just love cabbage roses! pretty pretty. Fondant flowers can be made in any color to match your wedding or other event. They make the cake look very elegant. Flowers made of fondant have a real look to them. Some like to use silk flowers, We do not recommend this to our brides! They look fake in your photos.

Wedding Cakes





This cake is a lace design inspired by the brides all lace dress.
The third tier is a stamped monagram. Fresh roses are used for cake topper.
Flavors for this wedding cake were strawberry shortcake,pink champaign,lemon and vanilla rasberry.





All white square cake with irodecent bubbles. Candles add an elegant shimmer to this cake. Decorated with fresh orcids and fresh rose petals.

Cake Contessa's favorate part of this cake is the daisy's the colors of this cake matches the 5 bridesmaid's dresses. We also do this cake in fondant. The green always compements the flowers. Banana cake with milk chocolate mousse was a hit.

Cakes with Color




Hello Ladies, Don't be afraid of color. It can make a huge statement when it comes to your cake, "I get the we want something different" but in white all the time. Let's be adventures together. This cake was skittles green, the flowers at the wedding were skittles orange,purple, and red. There are 3 different shapes a petal shape at the bottom, then it goes to a circular cake then a traditional round. The flavors were pink champagne and Mexican chocolate with a traditional strawberry shortcake.
Shapes and colors are friends. They go well together especially at weddings.
